Harvest Apple Oatmeal

Good morning! I was just thinking this morning about how one of my absolute favorite feelings is when it’s cold outside, but the house is warm and smells of coffee and breakfast! Ahh, really though, there’s nothing better in my mind…especially when hubby makes the coffee, which was the case this morning. And I have the morning off from work today so that’s like the perfect storm off all things wonderful!

One of my absolute favorite breakfasts during the colder months is oatmeal. It’s so simple, but so versatile. It warms you from the inside out and sticks to your bones. When I think perfect weekday morning, I’m usually including oatmeal into the scenario! And I’m not talking those little oatmeal packs that only make like two spoonfuls and are mostly sugar. Yeah, not gonna fuel me for my day one bit! I don’t know why some people get intimidated by making their own oatmeal because, listen, it’s as easy as tying your shoe…maybe not an excellent analogy, but you get the picture. ITS EASY. Bottom line! 

Like I said, oatmeal is so versatile and can be made according to how you’re feeling (or more often for me, what I have in the house). You can make it sweet with fruit and nuts or savory and top with an egg. You can make it for one or for a crowd. All in all, it’s the best thing eva!

Ive experimented with many different oatmeal combos, but my all time favorite for this time of year is this harvest apple oatmeal. For one, I usually have an apple and some raisons on hand, but also, the aroma through the house as this cooks is sooooo mind blowing! How can you not want to wake up and start your day when this is your life! 

So, this oatmeal…super easy! All you need is one apple, a handful of golden raisons, flax seed for some heart and mind healthy omega-3s, some cinnamon and ground ginger. What I used to do when it was just me eating it was just throw it all into a microwave safe bowl and microwave for 2 minutes. That’s it! But now, with being a wife and all and cooking for two it’s just easier to put it all in a pot, and I will say, if you have the time go for that route because it just seems creamier for some reason. I like to top with a splash of almond milk to cool it down and add extra creaminess.

And that’s that, cook until the liquid is absorbed and divide into two bowls and you’re set! Some oatmeal recipes I see use crockpots and require cooking for like 30 minutes…I don’t know why you would spend that much time on oatmeal, but this seems to cook in just 5 minutes! Like I said, it’s good  for those quick weekday mornings when you need something fast but substantial to last till lunch.

Harvest Apple Oatmeal

Ingredients
  1. 1 cup gluten free oats
  2. 2 cups water
  3. 1 Apple, chopped
  4. 1/4 cup golden raisons
  5. 2 Tbs flaxseed
  6. 1 tsp cinnamon
  7. 1 tsp ginger
  8. 4 drops liquid stevia or sweetener of choice
  9. Pinch of salt
Instructions
  1. Combine oats, water, apple, raisons, flax, salt and spices in medium saucepan.
  2. Cook on high until water begins to boil.
  3. Turn down heat and cover to simmer until all liquid is absorbed.
  4. Stir to make sure everything is well mixed.
  5. Add in sweetener to taste.
  6. Divide into two bowls and enjoy!
