Mint Chocolate Date Truffles

It’s that time of year…time for treats galore!

Christmas time has so many wonderful things associated with it…Christmas performances and Nativity scenes, tacky sweater parties and awkward family photos. Of course there’s also the hustle and bustle to find the PERFECT gift for family members and friends. But also, Christmas for me is about all the tasty treats! Mmmm…such wonderful memories of all the goodies we would slave over in the kitchen to send to neighbors and friends.

One kinda tradition we had was making those delicious chocolate truffle oreo balls…you know the ones that make you feel sick after two cause they’re so rich! But oh they’re soo tasty. Sometimes we’d make them just plain but sometimes to add a little festive spirit to them we’d flavor them with peppermint which really takes it to another level! I mean, what is more festive than mint and chocolate!

Yes, I do love those oreo balls…but I thought to myself, why not change them up a bit and make a healthy somewhat similar version!

Date balls are literally MAGIC!

Like there’s nothing like them!

How can something with such simple and whole ingredients taste so DIVINE!

Well, I’m here to show you that you can make a tasty treat that not only looks decadent and sinful, but tastes that way too! You don’t have to even tell anyone the secret that they’re actually super good for you…shhhh…it’ll stay between us, I promise!

Take these bad (actually good) boys to your next party and whip them out after a meal and people will be amazed!

The prep is quite simple, so even for those last minute get-togethers where you’re pulling your hair out trying to figure out what on earth to bring…I got you, girl!

All you’re going to need is 4 ingredients.

Yes, FOUR and only FOUR!

Start with a handful of dates and some cashews and blend them up in a food processor until nice and gooey. Next add 2 spoonfuls of AIM’s Cocoa Leaf Greens which, if you have followed me on Instagram, you’ve seen that I use this product in smoothies quite often and it is a miracle worker.

I’m gonna take some time to talk about the Cocoa Leaf Greens because I really think you should get yourself some of this stuff. Not only because it turns these Mint Chocolate Date Balls into a vitamin-rich dessert (those never goes together I feel like!), but also because it can be used in so many other things! Hidden in the cocoa goodness are ingredients like barley leaf concentrate, spinach leaf powder, pea protein, kale leaf powder, and much more. I’m telling you people, it tastes like cocoa! Especially with winter and all the bugs going around this time of year, getting extra greens in your diet everywhere you can is sooo important! You can get Cocoa Leaf Greens here

Back to the magical mint chocolate truffles.

So, after you’ve added your secret ingredient, add in just a smidgen of peppermint extract. Mix it all well together and roll into little truffle balls. Oh so cute!

You can eat them as is, but I like to roll them in some more Cocoa Leaf Greens to give them a nice chocolatey coating. Now you can either freeze them for later or eat right away. Either way, you’re sure in for a treat…and I’m telling you, people will be amazed at your skills, not even to mention that these little guys are a good-for-you treat!

Enjoy and tell me what you think! Did you take them to a party and blow people’s minds? I want to hear your stories…comment below and let me know!
