Apricot Pistachio Biscotti

During these cold winter months, nothing quite compares to a cozy afternoon cuddled up with a blanket sipping on some coffee with a subtly sweet biscotti. Here I’ve created a version of this crunchy dipping cookie that’s rich tasting and fruity, but full of good-for-you ingredients. You’re gonna want to dunk these Apricot Pistachio Biscotti in your next cup o’joe …just wait! 

But really, now that the temperatures are in the 20s…pretty much the coldest I think I’ve ever been in…I find myself drinking sooo much coffee and tea! Like, it’s probably a problem. And then when I have a hot drink I just crave giving it a little dunk of something. This biscotti, friends, is your…well, friend! Why can you call it your friend? Because it’s a cookie that gives a little sumpin, sumpin to your health. Tell me that’s not the greatest thing on earth! 

It’s made with whole wheat. 

Sweetened with coconut sugar. 

Includes healthy fat from flax seed and pistachios. 

Also, let’s go so far as it’s good for your soul because you’ll feel good with each crunch of this biscotti. Pretty much a mood booster, I’d say. 

Those cold winter months can be long, but thank goodness for naturally beautiful foods. Take a look at the beautiful green and orange. Ahh, beautiful food makes me so happy, and I’m taking all the happy endorphins I can get with decreased daylight this time of year. 

Maybe you’ve seen biscotti sold at your local bakery or coffee shop and the thought never crossed your mind you could make them just how you like them in the comfort of your own home…at your convenience, ready to snack on at ALL TIMES! Guess what my friends, your mind is about to be blown away. THEY’RE SUPER EASY! 

Like my dog, Sadie, could probably make them. 

Maybe not, but hubby sure could…and that’s saying something in the baking department.

  1. 2 cups white whole wheat flour
  2. 2 tbs flax seeds
  3. 1/2 tsp baking soda
  4. 1/4 tsp salt
  5. 2/3 cup coconut sugar
  6. 2 large egg whites
  7. 1 large whole egg
  8. 1 tsp vanilla
  9. 1 tsp cinnamon
  10. 1/2 tsp nutmeg
  11. 1/4 tsp allspice
  12. 1/4 cup pistachios (shelled)
  13. 1/4 cup dried apricots
  1. Preheat oven to 350 degrees.
  2. Combine flour, flax, baking soda, and salt in a medium bowl.
  3. In a separate bowl, combine sugar, eggs, vanilla, and spices.
  4. Combine both bowls together and mix until combined.
  5. Fold in nuts and apricots. Your dough will be dry, don't worry.
  6. Pour dough out on an ungreased cookie sheet.
  7. Form into a log shape and flatten until about 1 inch.
  8. Bake 25 mins or until firm.
  9. Allow to completely cool before slicing into strips.
  10. Enjoy with coffee or morning...afternoon...or evening!
