I never realized before how simple life could be for me to still find so much joy. It’s like everything that used to matter when I was a child has dissipated and all that really matters is faith, family, and genuine friends.
Back a few years ago, I believed that I would be happy when I finally graduated college and had a real job…and then when that happened I believed I’d be happy when I married the one I loved…and then when that happened I believed happiness would come from being financially secure.
And I’ll tell you something…happiness did come. But happiness and joy are two completely different things that a lot of people get confused with. Happiness is temporary. Those things listed above DID bring me happiness! I was extremely happy to be moving on with my life and finding my soul mate and discovering a new place to live and do life!
You can be overflowing with things that make you happy and still not find joy.
Joy is a choice. It’s a decision we make every single day to be satisfied with what the day has brought us and to live that day to our fullest potential with a joyful heart.

This is just something I’ve been pondering lately as I sometimes get caught up in the “stuffs” of life. But as many people I see around me with more than I have, I’m grateful for the simple. I’m grateful for the things I have right now…a warm place to sleep, the funds to buy good and healthy food to eat, and a man who loves me unconditionally.
In that thought, little things can bring us joy…even if it’s in the form of a warm and nutritious muffin like these! Funny how random things can provoke thoughts on completely different subjects! Tell me I’m not the only one who gets this!
So spread a little joy this week, whether its with friends, coworkers, or loved ones by enjoying the little things in life. Because those things are what’s going to stick around for the long haul.
Here’s a little demo of how to make these delicious, nutrient dense, fiber filled, healthy muffins if you like a little video interaction…
- 1 1/2 cups almond flour
- 1 1/2 cups oat flour (or just pulse whole oats in food processor)
- 1 tsp baking soda
- 1 pear, diced
- 1 inch fresh ginger grated
- 4 tbs honey
- 3 eggs
- 2 tsp apple cider vinegar
- 1 tsp vanilla
- 1 tsp ground cloves
- Preheat oven to 350 degrees.
- Combine almond flour and oat flour along with baking soda in a medium sized bowl.
- In another bowl, combine diced pear, egg, ginger, cloves, apple cider vinegar, honey, and vanilla.
- Combine wet and dry ingredients together and stir until just mixed.
- Spoon batter into greased muffin tin.
- Bake in preheated oven for 15 mins.
- Cool and enjoy!
