Fennel Clementine Wheat Berry Salad

Nutty and tangy is just what you’ll find with this Fennel Clementine Wheat Berry Salad. It’s perfect as a side or as a meal! And with a minty orange vinaigrette to add a little pizzaz you’ll never go wrong scooping up a mound of this salad.

Sometimes you just gotta go out on a limb. 

Not literally of course, but I’m always looking for new things to do and try.


Examples: try a new restaurant, take a new route to work, try a new workout/go to a new fitness class, read instead of watch Netflix for a week, try a new wine. 

For me, trying new things comes easily. I’m always looking for new flavors to add…to FOOD & LIFE. But I know that for a lot of people, trying new things is scary. The best advice I can give to those of you who relate with that is this…99.999% of the time you do that scary thing or expand your knowledge in that one area you’re going to love it! And for the other sliver of a percent. Well, you know what they say. “You never know ’till you try!” 

So, along those lines, picking out something new and fun at the grocery store to cook with is my absolute FAVE! Like Wheat Berries! I have heard so many people talk about how good wheat berries are, seen recipes on Pinterest that looked incredible involving wheat berries…but for some reason or another it’s taken me this long to experiment with them! I’m honestly ashamed of that fact because they are literally the best thing EVA! I mean it’s WHEAT & BERRIES! Not really, of course, but they really are as if a strand of wheat had juicy, luscious berries hanging off of it. 

You’re probably gonna see some more recipes with these little gems in the near future. I apologize in advance for a future overload of wheat berries…but raining wheat berries isn’t too bad an idea! 

This salad combines the nuttiness of the wheat berries along with the tanginess of clementines and a little crunch from diced fennel. Tying everything together is a orange mint vinaigrette. It’s an addicting combo…just sayin. 


Fennel Clementine Wheat Berry Salad

  1. 1 cup wheat berries
  2. 1/2 fennel bulb, diced
  3. 1 clementine
Orange Mint Vinaigrette
  1. 4 mint leaves
  2. 1/4 cup orange juice
  3. 2 Tbs apple cider vinegar
  4. 4 Tbs mild oil (I used Grapeseed Oil)
  5. 1 tsp salt
  1. Cook wheat berries as instructed on package.
  2. Once cooked, allow to cool in the refrigerator.
  3. While cooling, dice up fennel, segment the clementine and dice up the segments.
  4. Place ingredients for vinaigrette in a high speed blender and blend until well combined.
  5. Now for the assembly: mix wheat berries, fennel, and clementine together and pour desired amount of dressing over the top.
  6. Mix well and serve!
