There’s such a toast craze goin on right now…you’ve got people topping crusty bread with smooshed avocado, the classic nut butter spreads, and hummus-veggie combos. People are eating toast for breakfast, lunch, and dinner these days as well! It really is like toast is the new black skinny jean. It literally goes well with everything! And everything looks better on it!
This combo of sweet and juicy pomegranate jewels pairs so much better with slices of basil than I ever could have imagined! I mean, I love pomegranate on its own and I love basil on its own. But I would have never thought this combo would have turned out as well as it did! I was trying to come up with a tasty recipe for you guys…something different than anything I’ve created so far, and wanted to include the festive pomegranate. Literally my thought process was…bruschetta is always good, bruschetta has tomatoes, tomatoes are red, pomegranates are also red…it’s gotta be worth a try, right?
Now you have my secret to coming up with recipes. It’s crazy how often I decide on recipe combos based on color!
But, you will be happy to know that this bruschetta is MIND BLOWING! The pomegranate pairs so well with slivers of basil, a pinch of salt, squeeze of half a lemon, stacked on top of a crusty slice of baguette, and topped with a drizzle of balsamic glaze. It’s a crunchy bite you’re gonna keep on taking!

- 1 loaf of Multigrain French Baguette
- 1 pomegranate
- 4 leaves of fresh basil
- juice of 1/2 lemon
- pinch of salt
- balsamic glaze
- Preheat oven to 425 degrees.
- Place entire baguette in oven and toast while making bruschetta.
- Deseed your pomegranate and place seeds in a small bowl.
- Julienne the fresh basil and stir in with the pomegranate seeds.
- Squeeze lemon juice into bowl and sprinkle salt on top.
- Stir together to combine.
- Next, take your baguette out of the oven. It should be toasted on the outside.
- Slice at an angle all the way down the baguette.
- Top each slice with a spoonful of bruschetta and drizzle balsamic glaze on top.
