We’re keeping it simple today with a jazzed up side that will have everyone eating their veggies tonight! These Roasted Brussel Sprouts with Lemony Hemp Sauce are just what your dinner tonight needs.
Sometimes I like elaborate things. I mean, what girl doesn’t? I enjoy pairing jewelry with an outfit, and finding a pair of shoes that match perfectly with a look, and putting my fuchsia Burt’s Bees Juniper Water lipstick on every once in a while. But some things are just better, simple.
I’m loving the minimalist era we’re embarking on now. People are realizing that life is not found in the things we buy and own. Some are quitting their corporate jobs that they thought were going to bring them fulfillment to seek out a life where joy is found with less and happiness is not bought. We’re embarking on a time where simplicity is treasured, and I’m lovin’ it!
I grew up with every need met. I woke up every morning in a warm bed, went to a great school, participated in many after school activities and hobbies, and came home to a delicious and filling dinner at the table with my family around chatting about each of our days. This was life as I knew it. If I needed anything I could get it. But my parents did a good job of teaching me the value of money and material possessions by making me save up for anything that I wanted, but didn’t need. I remember being 7 years old and saving every penny I made to buy an American Girl Doll I’d been eyeing for a few months. She was $80 at the time, and every bit of my allowance for months went to buying that doll. It wasn’t just the lesson of working and saving that my parents taught me. I took care of that doll with everything in me because she was all mine. I’d worked hard for her. And I appreciated the work I did to buy her.
Now, with being newly married and Paul in school, minimalism started out as necessary to make ends meet, but now it’s something I enjoy and am proud of. We only just bought a coffee table for our living room because we were breaking our backs pullling up a wicker basket every night to set mugs and computers on. We’ve budgeted my income while Paul’s in school to not have to use any student loans towards living expenses and still live below our means in order to save for the future and give to those in need.
Minimalism has made its way into my cooking as well. I always try to keep cooking time to 30 mins or less and use few and basic ingredients as much as possible. When making this recipe for Roasted Brussel Sprouts with Lemony Hemp Sauce, I kept debating adding in more ingredients to the sauce. But I just couldn’t get myself to because it was absolutely delicious just on it’s own. Only 4 ingredients and bound to be your best friend for adding that special something to all your favorite roasted veggies.

You may even branch out to try this sauce with other veggies like green beans, roasted beets, sweet potatoes, and maybe even as a sauce on your favorite whole grain pasta dish! Literally the possibilities are endless, so let’s get saucy!
Roasted Brussel Sprouts with Lemony Hemp SaucePrint Recipe
- 1 bag of brussel sprouts, approximately 25-30 brussel sprouts
- olive oil
- 4 Tbs raw, shelled hemp seeds
- 3 Tbs unsweetened almond milk, or other nut milk
- Juice of 1/2 a lemon
- 1 clove of garlic
- pinch of salt and pepper
Preheat oven to 400 degrees and line baking sheet with aluminum foil.
Wash and dry brussel sprouts.
Half each brussel sprout and place on prepped baking sheet.
Drizzle olive oil over brussels along with salt and pepper.
Roast in preheated oven for 20 mins.
While brussels are roasting, make sauce.
In high-speed blender or food processor, combine hemp seeds, almond milk, lemon juice, garlic, salt, and pepper.
Blend until smooth.
Set aside to drizzle over brussel sprouts once done roasting.
Feel free to experiment with other roasting vegetables with this sauce. I'd recommend roasted potatoes, beets, green beans, and squash! Another idea is to use on top of your favorite whole grain pasta...get creative!
