Red, White, & Blue Chia Pudding

Bring on the patriotic foods! This Red, White, & Blue Chia Pudding is the perfect healthy dessert to celebrate the 4th of July next week! It’s a low sugar, fiber and omega-full treat that will get you in the spirit to celebrate our freedom. 

Oh hey there! Is it just me or is anyone else like…”Where did June go!” June was here and gone and I’ll be honest, celebrating July 4th is always bitter sweet for me. July seems like the half way point of summer, to me, and it always seems like after July 4th we’re closer to it being winter again. 

I know, that’s weird. Sounds even weirder when I write it. But really, guys, that’s how I think! 

Anyways, depressed thoughts of summer only lasting so long aside…Aren’t these chia puddings cute? I remember the first time I tried chia pudding. I was like, ok, so for real all that thickens it up is those little seeds? Really? I took a bite and was pleasantly surprised by the creaminess and texture. I remember fond memories of my dad bringing home tapioca pudding from the grocery store sometimes and eating the creamy dessert out of those little plastic cups, but always sucking on the tapioca pearls and saving them for last. 

I’m really sounding like a weird child right now! 

But chia pudding kinda has the same concept, so naturally I was obsessed. 

I’ve varied the chia pudding and tried out different combos from golden milk chia pudding to coconut cream chia pudding…to now this Red, White, & Blue Chia pudding. 

And believe it or not, those colors are nothing but real 100% fruit! Isn’t fruit beautiful!

First you start with one can of full fat coconut milk. Next, get yourself 3 bowls and divide the coconut milk between each of the bowls evenly. 

Next you’ll measure out the raspberries and blueberries and place them in the bowls, raspberries in one bowl and blueberries in the other. Transfer bowl with raspberries to the blender and blend until pureed. Then pour back to original bowl. Next do the same thing with the blueberries, blending with the coconut milk until pureed. Transfer to original bowl. 

Lastly, add your chia seeds. Measure out chia seeds and sprinkle evenly between the three bowls. To the plain bowl (the one without any berries), add in vanilla and honey and stir to combine. 

Now place all the bowls in the refrigerator to set for about 30 minutes to 1 hour. Once set, remove from the fridge and prepare your desserts. Begin by spooning a layer of the raspberry pudding, top by the white pudding, and finally finish with the blueberry pudding. And there you have it! A cup full of red, white, and blue chia pudding! 

Ok, now go get your bowls ready and let’s make some puddin’! 

Red, White, & Blue Chia Pudding

Serves: 2


  • 1 can full fat coconut milk
  • 1/2 cup chia seeds
  • 1/2 cup fresh or frozen blueberries
  • 1/2 cup fresh or frozen raspberries
  • 1/2 tsp vanilla
  • 1 tsp honey



Pour coconut milk evenly into 3 separate bowls.


In one bowl add blueberries, and into a second add raspberries.


Transfer blueberries with coconut milk to the blender and blend until pureed.


Pour back into original bowl, rinse blender, and repeat with raspberries.


Next, to third bowl that doesn't have berries, add in vanilla and honey.


Measure out chia seeds and sprinkle evenly between the three bowls. Stir to incorporate.


Place bowls in the refrigerator for 30 minutes to 1 hour until set.


Spoon out raspberry pudding into two small bowls or mason jars, followed by vanilla pudding, followed by blueberry, creating 3 layers.


Top with blueberries and raspberries and serve.
