Maybe you can tell, I love Mediterranean flavors. Give me all the feta cheese, artichokes, olives, and greek yogurt! Today I can’t wait to share with you this delicious recipe for Mediterranean Salmon Pitas as a really quick, really easy, on-the-go, lunch option!
Hello hello friend! It’s time for another delicious recipe, celebrating food and a positive relationship with it! I, currently am posting this recipe from Puerto Rico (what what!!). Yeah, hubs and I are on what some may say a 1-year anniversary trip, or second honeymoon…basically I’m just calling it one of our trips to try and see the world while we’re young!
Paul hasn’t been to the Caribbean, actually hasn’t even been outside of North America, so this has been super duper fun to see blue waters together and experience all this new beauty together.
Ok! So now for these Pitas!
I’ve mentioned before how lunch can be a tough meal to know what to do with. A lot of times, I have basic breakfast items, I plan out dinners for the week, but I get stuck on lunch…
Anyone else been there?
Lunch usually for me is leftovers or random things in the fridge thrown together to make a hopefully satisfying meal. But when I do think about lunches on the weekend, I love prepping something that can be easy to throw together each day.
Because let’s be honest, the lunchtime hangry monster is bad, ya’ll!
(Side note…I don’t ever use the word ya’ll in person. But somehow it just sounds good when I write it.)
Back to business…
This week I finally decided to use a can of salmon I had in my pantry for, no joke, 4 months. The result…this recipe!
It’s salmon, so chock-full of healthy omegas that will keep you satisfied with it’s oil and protein, artichokes, tomatoes, red onion, all tied together with a creamy feta-yogurt dressing.
And the awesome part…you can do what I did and stuff the salmon in a pita with some spinach or serve it as a salad on it’s own. The choice is yours!

Mediterranean Salmon PitasPrint Recipe
- 1 can of salmon
- 1/4 cup diced red onion
- 1/4 cup diced grape tomatoes
- 1/4 cup chopped artichoke
- 1/4 cup plain greek yogurt
- 1 Tbs olive oil
- 1 Tbs lemon juice
- 1/4 cup crumbled feta cheese
- 1/2 tsp salt + pepper to taste
- 3 whole pita breads, sliced in half
Drain salmon from can, then fork out into a medium-sized bowl.
To the salmon, add onion, tomatoes, and artichoke; stir together.
In a small bowl, combine greek yogurt, olive oil, lemon juice, feta, salt and pepper and stir together until creamy.
Spoon-out yogurt feta mixture into bowl with salmon and stir to combine.
Next prepare your pita by adding some baby spinach to pita bread and topping with mediterranean salmon.
