Coconut Caramel Popcorn

Coconutty can you say “yeah!” This Coconut Caramel Popcorn is just the right balance of sweet for all you sweet popcorn lovers out there…oh, yeah, and if you like sweet popcorn. 

So, fun story about this popcorn. This is Paul’s and my favorite popcorn recipe! We love, love, love sitting down and watching a movie or binging on a show with this popcorn in hand. 

I have to hold the popcorn, though, because otherwise hubs will just down it in like two scoops with his hands. “Come on babes, you gotta pace yourself!”

I swear, he eats without tastebuds most of the time. I don’t know how he ever tastes anything cause he eats it so fast! 

I’m a kettle corn lover. So, naturally, one day I had to try making my own version and found this delicious recipe. I have a hard time even calling it a recipe because it’s so darn easy! And who doesn’t love making homemade popcorn together with their man. 

I remember, too, the first time I learned to make popcorn over the stove. It was my Junior year in college when I lived in a house with 5 other girls…yeah, that’s right, there were 6 girls in one house and it was both fun and crazy. But most of the time fun. 

I went to school in South Carolina where, during the winter, if there’s even a potential for one snowflake everything is canceled. This particular day, however, there was about a foot of snow! Yeah, it was a national disaster for sure. 

Just kidding, but we were all freaking out with excitement at having classes canceled and cuddling up inside all day watching Grey’s Anatomy. Oh yeah, and that was the snowstorm that we, no joke, watched Grey’s Anatomy from 10:30 AM until 10:30 PM. 12 hours of Grey’s Anatomy probably wasn’t the best thing for us, but it was one way of staying warm. 

Between episodes, one of my roommates asked if we wanted popcorn and proceeded to make kettle corn on the stove mixing brown sugar and oil and kernels and swirling all of it around to prevent it from burning. I’m telling you…SO GOOD! 

Well, let me share my fun popcorn memories with you by sharing this recipe for Coconut Caramel Popcorn, sweetened with coconut sugar and popped up with coconut oil. It’s a fun, quick treat any date night would benefit from! 

Coconut Caramel Popcorn

Print Recipe


  • 1/4 cup dry popcorn kernels
  • 1 Tbs coconut oil
  • 2 Tbs coconut sugar
  • 1/4 tsp salt
  • Shredded coconut for topping.



Combine kernels and oil in a medium-sized pot with lid and heat on stove at high heat.


Once one kernel pops, turn heat down to medium and add in sugar and salt.


Swirl and shake kernels around in oil and sugar every few seconds, lifting from heat and then returning so as not to burn them.


Remove from heat as soon as popcorn stops popping.


Pour into a medium-sized bowl and allow to cool before gobbling up!


Top with shredded coconut if desired.


My pot is a T-fal pot. I like this pot because it's light-weight so as to not kill yourself swirling the kernels around (although it is still quite a workout).
